The transformation of a traditional restaurant into an immersive experience focusing on heritage in the modern kitchen. By incorporating history and folklore Chef Torres has created a window into the past using food as a medium for exploring insights into our origins and nature. The time traveling kitchen can take an experimental scientific view on history examining cause and effect through ingredients and migrating populations. Chef Torres will examine resources such as the Special Collections department at UTSA that holds a voluminous collection of Mexican cookbooks and manuscripts as well as insights and discoveries that are used in the development of a menu.
